El Fénix, a cooperative in Calarcá, Quindío, Colombia, is an organic coffee farm, post-harvest lab, and education hub. It focuses on innovative farming, organic practices, and selective breeding while supporting local farmers through a crowdfunded community wet mill. By purchasing cherries instead of parchment and using a two-payment system, El Fénix ensures better quality control, fair pricing, and direct farmer benefits from export premiums.
about the coffee
This coffee is processed with precision to highlight its unique flavours. After hand-picking and floating the cherries, they are fermented anoxically in cool water for 48 hours, maintaining a stable 25°C. Post-fermentation, the cherries dry in their skin on raised beds for 4–5 weeks, developing vibrant and complex profiles. This meticulous process results in exceptional coffees celebrated for their clarity, depth, and distinct tasting notes.

- coffee: 15g
- water: 250g at 100°C (212°F)
method:
- Add 15g of freshly ground coffee to the Hoop brewer.
- Slowly pour 250g of water into the outer ring of the Hoop.
- At the 1-minute mark, use a gentle Weiss Distribution Technique (WDT) to break the crust.
- Allow the brew to draw down naturally, aiming for a total brew time of around 4 minutes.
