meet the producer
Jairo Arcila is a third-generation coffee grower from Quindío, Colombia, with a legacy deeply rooted in coffee farming. Married to Luz Helena Salazar, Jairo is also the proud father of Carlos and Felipe Arcila, co-founders of Cofinet. Before retiring in 2019, Jairo worked for over 40 years as a Mill Manager at Colombia’s second-largest coffee exporter. His journey as a farm owner began in 1987 when he purchased Finca La Esmeralda and planted his first Caturra lot. Over the years, Jairo expanded his holdings to six farms, including Villarazo, Mazatlan, Santa Monica, Maracay, and Buenos Aires, creating jobs and positively impacting his community during harvest seasons.

This Pacamara coffee, grown at Jairo Arcila’s Santa Monica farm, is a stunning representation of the variety’s full potential. Pacamara, a hybrid of the Pacas and Maragogipe varieties developed in El Salvador, is renowned for its large beans and exceptional cup profile. While it yields less than other varieties, the flavour complexity more than compensates for this, offering a coffee that is rich and full-bodied. Jairo’s careful practices, including precise harvesting, underwater fermentation, and meticulous drying, allow the coffee to shine. The result is a vibrant, smooth cup with remarkable depth and balance, embodying the high standards of quality that define the Pacamara varietal.
