javier quintero
This is our second year working with Javier Quintero, whose Buena Vista farm sits high in Inza, Cauca, Colombia—where volcanic ash soil and high altitudes create the perfect environment for growing exceptional coffee.
This unique variety was first noticed by farmers for its standout qualities—higher yields and natural resilience. Later, a lab in London identified it as genetically similar to Bourbon Aruzi, a rare Ethiopian variety.
The coffee is harvested at peak ripeness, floated and hand-sorted, then undergoes 30 hours of underwater fermentation before pulping. After washing, the parchment is dried slowly in temperature-controlled conditions for optimal flavour development.
Expect a complex, balanced cup with vibrant notes of sherbet, cherry, and orange
