this coffee's story

Our second year working with Javier Quintero, this unique variety was first noticed by farmers for its higher yields and natural resilience. A lab in London later identified it as genetically similar to Bourbon Aruzi, a rare Ethiopian variety.

The coffee is harvested at peak ripeness, floated and hand-sorted, then undergoes 30 hours of underwater fermentation before pulping. After washing, the
parchment is dried slowly in temperature-controlled conditions for optimal flavour development.

Expect a complex, balanced cup with vibrant notes of sherbet, cherry, and orange.
