about the coffee

This washed Pink Bourbon coffee, grown at Luz Helena’s farm, Maracay, exemplifies meticulous attention to detail. Grown at an altitude of 2,100 metres above sea level, the coffee cherries are harvested with strict ripeness criteria, floated, and hand-sorted to remove any defects. The cherries undergo a 30-hour underwater fermentation, followed by pulping, washing, and drying under controlled conditions. This process enhances the unique characteristics of the 100% Pink Bourbon micro-lot, a varietal thought to have originated as a mutation in San Adolfo, Huila. The result is a clean, vibrant coffee with delicate floral notes, bright acidity, and a refined sweetness that reflects Luz Helena’s unwavering commitment to excellence.

steps:

  1. Add 14g coffee, pour 50g water, stir, and bloom (30s).
  2. Add water to 225g, stir, and steep (1:30).
  3. Flip and plunge steadily (30s).
