Patio Bonito is a hardworking, family-run farm in Caldono, Cauca, where Paola Trujillo plays a vital role. With the guidance of her father, Carlos Arturo Trujillo, who has been a coffee farmer for 40 years, Paola has been instrumental in perfecting the fermentation process for their coffee. Paola’s dedication and expertise have significantly contributed to the farm’s success and the exceptional quality of their coffee.

This coffee was grown by Paola Trujillo at the Patio Bonito farm. The coffee cherries are harvested according to strict ripeness criteria, then floated and hand-sorted to remove any defects. After that, the cherries are subjected to 30 hours of underwater fermentation before being pulped. The parchment is then gently washed and dried in temperature-controlled conditions until the ideal moisture content is reached.

This microlot is 100% Wush Wush, a rare varietal grown in Colombia. It is believed to have originated from Wush Wush, Ethiopia, about 25 years ago.
